THE PROFESSIONAL CHEF is a good book, but PROFESSIONAL COOKING is what&#039;s used locally (and, in fact, the book from which I teach my classes) so if you decide to take a cooking class (or need help/guidance from me), that&#039;s the resource you&#039;ll use.</description>
