Same part that is used for standard bacon, just uncured (there's that curing again!) and unsmoked. <br/><br/>Pork belly is awesome, and great for the "nose-to-tail" eating that's become so in and is pretty environmentally conscious, too. <br/><br/>Unfortunately, they're so good they're making MY belly a little porky... ;) Nope, it’s belly of a pig.
