Shock and Foie

Check out this fantastic manifesto on sustainability and organ meat and how a diet– that includes foie gras, seriously– fulfills the pattern of creation and destruction inherent in how the Earth works.  It’s written by the chef of Incanto in SF, Chris Cosentino.  Incredibly well-thought out and interesting, even if you’re on the veg*n side of the debate.
