Discuss: Thanksgiving Leftovers

I smoked a turkey for Thanksgiving this year.

Of course, I had a little trouble getting my lips around it.

([Rim shot]  Thank you.  Drive safely, everybody.  I’ll be here all week.  Be sure to tip your waiters and waitresses.  Try the veal.)

It just isn’t Thanksgiving until I tell that one.  I hope that, somewhere,  Shecky Greene is smiling.

It also isn’t Thanksgiving without leftovers.

One of the most-Googled topics from this past weekend was “Leftover Turkey Recipes”.  I discovered this morsel of trivia while I was Googling “Leftover Turkey Recipes”.

I didn’t want to attempt anything particularly complicated, especially after having spent much of Wednesday and Thursday in the kitchen.   After sifting through a dozen or so recipes for Sunday dinner, I settled on Turkey Alfredo Casserole.   Pretty basic ingredients.   About thirty minutes of prep time. (Editor’s note: We substituted butter for margarine. Of course.  No trans fats for us.  No dried basil either– too easy and cheap to get fresh.)

The end result was pretty tasty.  The smoked meat gave the dish a little extra depth.  (I wasn’t kidding about smoking the turkey…a custom of mine that goes back more than twenty years.)  The final product was a little awkward to scoop onto plates.  The recipe calls for fettuccine, but Julie noted that bowtie pasta might be a better choice next time.   I also suspect that chicken would work as well as turkey in this recipe. (Editor’s Note: A great way to use up leftover meat from a roasted chicken, I’ll bet.)

    We make something that I think was originally called “Turkey and Noodles” and is now known as Turkey Noodle. I’m not sure exactly how it comes together, but there are fat egg noodles, turkey stock and leftover turkey meat involved. And lots of salt and pepper. Really good, really midwestern-y.

    Mrs. CincyCapell makes a killer Turkey Pot Pie with leftover turkey. She makes the sauce with the leftover gravy, some stock, milk & dry sherry. It’s extra yummy. We wanted to try our hand at turkey hash with a poached egg on top this year, but alas we got ‘turkeyed out’ after thanksgiving at home, another one with my mum, then turkey sandwiches & then the pot pie. Maybe next year…..

    I did turkey and stuffing Quesidilla’s! In corn tortillas I put turkey, cheese, stuffing. Then for dipping sauce I did leftover gravy- The husband couldnt have been happier with those leftovers!!

    Similar to the Quesadilla, I made a late-night turkey and stuffing burrito–complete with the cranberry compote and gravy. It needed some crunch and I didn’t have any lettuce, so I went with–and really, who wouldn’t?–bacon.

    My favorite thing to do is an old southern thing that only people I knew in Georgia ever did (though I’m sure it’s not unique to west-central Georgia)–Hot Turkey Sandwiches. Open faced sandwich made of toast, turkey (at room temp), and hot gravy (the turkey will heat up w/o drying out when it is sandwiched between the hot toast and the hot gravy). Mmmmmm. It’s good with the cold leftover green beans, too.

    Made stock from the leftover carcass and then used that homemade stock to make a killer pot pie with the leftover turkey and leftover frozen pie crust.

      Whoa, hey, CK! Love turkey pot pie– I think I have some turkey carcass in my freezer, unused after the holidays. Hmmm…
