I&#039;d absolutely recommend it.  It was a lot of fun to make the stock from the carcass and then use both the stock and the &quot;leftover turkey proper&quot; for the pot pie. One of the things I&#039;m bad at doing is actually using extra veggies/food items I have around. So to not only use the carcass in the stock AND the leftover turkey in a pot pie together was pretty much a crowing achievement for me.  2 leftover uses from 1 meal. Wow. And technically the stock keeps on giving I suppose. Anyway, it looked and tasted great to boot but &#039;you don&#039;t have to take my word for it&#039;... (at least not for the looking great part):

		<description>Similar to the Quesadilla, I made a late-night turkey and stuffing burrito--complete with the cranberry compote and gravy.  It needed some crunch and I didn&#039;t have any lettuce, so I went with--and really, who wouldn&#039;t?--bacon.

My favorite thing to do is an old southern thing that only people I knew in Georgia ever did (though I&#039;m sure it&#039;s not unique to west-central Georgia)--Hot Turkey Sandwiches.  Open faced sandwich made of toast, turkey (at room temp), and hot gravy (the turkey will heat up w/o drying out when it is sandwiched between the hot toast and the hot gravy).  Mmmmmm.  It&#039;s good with the cold leftover green beans, too.
