21c’s boutique hotel in Cincinnati is set to open soon, and Michael Paley, the current executive chef of Proof on Main and Garage on Market, will be heading up the hotel’s restaurant, Metropole.
Metropole will focus on Cincinnati’s European and Germanic dining heritage. Everything will be cooked on an open fire in a custom-built hearth. The menu will feature string-roasted meats, ash-cooked vegetables, house-made charcuterie as well as craft beer and bourbon.
Paley’s current position at Proof will be assumed by Levon Wallace of Ojai Valley Inn, Harbor View Hotel & Resort and The Kelley House in Nantucket.
